Almond Coconut Energy Balls with CBD

If you are looking for a fun and creative way to get your daily dose of CBD, these energy balls are a perfect fit!  Inspired by Almond Joy candy bars they contain whole food ingredients and make a great snack or better-for-you dessert.  I can also personally say they pair well with coffee. ๐Ÿ™‚

Almond Coconut Energy Balls with CBD

A great way to get your daily dose of CBD! These Almond Joy inspired treats make a great snack or better-for-you dessert option. Each energy ball comes out to 15mg CBD per treat.

Equipment

  • Food Processor
  • Freezer/Refrigerator

Ingredients
  

  • 2 C pitted dates
  • 1/2 C whole almonds
  • 2/3 C shredded unsweetened coconut
  • 2 TBSP cocoa powder
  • 2 TBSP hemp hearts
  • pinch of salt
  • 1 TBSP maple syrup
  • 1 tsp vanilla extract
  • 1 tsp Elevated Hemp CBD 1800 Oil (about 5 droppers)

Instructions
 

  • Place dates and almonds in a bowl and pour boiling water over them. Let soak for 20 minutes.
  • Drain water from dates and almonds and place them into bowl of food processor. Pulse processor a few times to get the dates and almonds to start breaking up.
  • Add the rest of the ingredients and process until a dough ball starts to form.
  • Put the mixture into a sealed container and refridgerate for at least 60 minutes (overnight is fine too!).
  • Scoop mixture by the tablespoon and squeeze to form ball. Place onto a baking sheet. When you have formed all the energy balls, place baking sheet into freezer for 60 minutes.
  • After the balls are individually frozen they can be moved to an airtight container in the freezer for 4 weeks. You can also keep them in the fridge if you prefer that texture but they will only last a week or so in the fridge.

Notes

*I make 20 energy balls with this recipe so there is 15mg CBD per ball. Feel free to adjust the CBD to suit the dosage you want.
*These can be kept in the fridge or freezer. They will keep about a week in the fridge, or about 4 weeks in the freezer.
